Recipe: Creamy Spinach Pesto


Creamy Spinach Pesto

This Creamy Spinach Pesto recipe is a creamy and delicious alternative to basil pesto. Best of all, it only takes about 10 minutes and anyone can make this!

Prep: 10 min. Cook: 15 - 20 min.

Servings: 4 - 6


Ingredients

8 Cups Fresh Spinach

6 Cloves Garlic

2 Tbsp Water

2 1/2 Tbsp Olive Oil

3 Tsp Salt

1 lb Pasta, Spaghetti or Linguini recommend, but you can use whatever you have in the house.

1/3 - 1/2 cup cream cheese (to your tastes)

Grated Cheese

Instructions

Bring a pot of water to a boil for the pasta.


Add about 1/3 - 1/2 the fresh spinach to a food processor.

Add 1 Tbsp water

Add 1 1/2 Tbsp olive oil

Add 3 garlic cloves

Add 1 tsp salt

Process the ingredients down.


Scrape down the sides of the processor.

Add another 1/3 of the spinach

Add another 1 Tbsp water

Add 1 Tbsp olive oil

Add 3 garlic cloves

Add 1 tsp salt

Process the ingredients down.


Scrape down the sides of the processor.

Add the rest of the spinach

Drizzle olive oil

Add about 1 tsp salt

Process the ingredients down. Set aside.


Cook the pasta according to the instructions. Before draining reserve one cup of the pasta water.

Drain the pasta

Place 1/2 of the cream cheese into the empty pasta pot (the heat of the pot will help to soften the cheese)

Dump the pasta on top of the cream cheese and add the remainder of the cream cheese. Combine with the pasta.

Add the pesto sauce and combine well with the pasta.

Add some of the reserved pasta water to thin the pesto to taste.


Serve with grated cheese.


Notes

If you're a fan of pine nuts normally used in pesto, add them in, they will be delicious in this recipe.


If raw garlic is too much for your tastes, roast the garlic to bring out the sugars and completely change the flavor of this dish. Cut the top off an entire head of garlic, drizzle with olive oil, wrap up in a sheet of aluminum foil and bake in a 350-degree oven for about 45 minutes. Scoop out the cloves with a small spoon.


You can toss in some fresh tomato slices on top to brighten this dish.


You can squeeze some fresh lemon on each dish to brighten the flavor.
